茶氨酸（L-Theanine）是茶叶中特有的游离氨基酸，茶氨酸是谷氨酸γ-乙基酰胺，有甜味。茶氨酸含量因茶的品种、部位而变动。茶氨酸在干茶中占重量的1%-2%。茶氨酸在化学构造上与脑内活性物质谷酰胺、谷氨酸相似，是茶叶中生津润甜的主要成份。茶氨酸含量约为新茶的1～2%左右，其含量随发酵过程减少。
茶氨酸为白色针状体，易溶于水。具有甜味和鲜爽味，是茶叶的滋味的组分。其比旋光度α]20D为[：+8.0°-+8.5°。
