L- 乳酸是以玉米淀粉为原料，经过生物发酵精制而成的一种有机酸，为无色 澄清粘性液体，水溶液显酸性反应。与水、乙醇或乙醚能任意混合，在氯仿中不溶。因其 左旋的特征，具有很好的生物相融性， 能与哺乳动物相融， 可直接参与人体代谢、无任何副作用，被广泛应用于食品、医药等领域；
用途编辑
1．食品行业： 主要用于糖果，饮料（如啤酒，葡萄酒及乳酸类饮料）等食品加工业中，作为酸味剂及口味调节剂，被称为绝对安全的食品添加剂。另 还可用于清凉饮料、蔬菜的加工和保藏；
2． 医药行业： L- 乳酸(L-lactic acid)是一种重要的医药 中间体， 可用作生产红霉素林格氏液输液、 L 乳酸钙、 L 乳酸钠、 L 乳酸锌、 L 乳 酸亚铁等药物还可用作 手术室、病房、实验室等杀菌消毒剂
3．化妆品：可用作滋润剂、保湿剂、皮肤更新剂、 PH 调节剂、去粉刺剂、去齿垢剂； 4．农药行业： L- 乳酸具有很高的生物活性，对农作物和土壤无毒无害，可用作生产新型环保农药，在日、美等发达国家已得到大力的推广。
5． 烟草行业：适量加入 L- 乳酸，可提高烟草的品质，并保持烟草的湿度； 皮革制造业：可使皮革柔软细腻，从而提高皮革的品质； 纺织工业：可用来处理纤维，可使之易着色，增加光泽和触感柔软；

性质与稳定性编辑
1.能随过热水蒸汽挥发，常压蒸馏则分解。浓缩至50%时部分转化为乳酸酐，故85%-90%的乳酸产品中一般含有10%-15%乳酸酐。具有强吸湿性。
2.存在于烟叶、烟气中。
