概述：存在于草莓的香味成分中，多为反式体。白色棱形晶体，温度高时为无色液体。微溶于水，可溶于乙醇、丙二醇及有机溶剂。沸点133℃(O.4kPa)。相对密度0.9812。折射率1.4578。熔点24.4℃。具草莓、苹果汁样香气，带坚果、焦糖和麦芽酚样香味。以丙醛的醇醛缩合、再经选择氧化而得。主要用于调配食用香精，常用在枫槭香精中。也可制成酯类香料。

The melting temperature of 24.4 ℃. Strawberry and apple juice aroma, with nuts, caramel and maltol sample fragrance. To propanal aldol condensation, then through selective oxidation. Mainly used for mixing edible flavor, commonly used in maple maple flavour. Also can be made into esters spices.
