琥珀酸二钠:简称WSA, 俗称干贝素, 是近年来调味品中广泛应用的鲜味剂。它较多存在于贝类、 虾、 蟹等海产品中, 对这类食品呈现的鲜美味道起到了很重要的作用。另外, 琥珀酸二钠在其他植物, 如香菇中也有存在。我国食品添加剂卫生标准规定其可应用于调味品中。
琥珀酸二钠分为结晶琥珀酸二钠和无水琥珀酸二钠。目前, 食品工业中最常用的为晶体琥珀酸二钠, 通常含有6个结晶水。琥珀酸二钠是白色结晶性颗粒或结晶性粉末, 无臭、 无酸味, 有特殊贝类滋味, 味觉阈值0.03%,易溶于水(20℃ 35 g/100mL),不溶于乙醇。 结 晶 琥 珀 酸 二 钠 在120 ℃时完全失去结晶水, 即为无水琥珀酸二钠, 无水琥珀酸二钠鲜度约为结晶琥珀酸二钠的1.5倍。
琥珀酸二钠由琥珀酸与氢氧化钠反应制成,经120℃热风干燥,粉碎得无水物。目前我国许可使用的有机酸类鲜味剂只有琥珀酸二钠一种。
1.琥珀酸二钠与谷氨酸钠配合使用,一般使用量为谷氨酸钠的10%左右。我国《食品添加剂使用卫生标准》(GB2760-1996)规定,琥珀酸二钠可用于调味料,最大用量为20 g/kg。

(2)实际使用参考:本品作为调味料、复合调味料,常用于酱油、水产制品、调味粉、香肠制品、鱼干制品,用量为0.01%~0.05%;用于方便面、方便食品的调味料中,具有增鲜及特殊风味,用量0.5%左右。作为清酒、合成清酒的调味料,用量为0.01%~0.09%;作为酱油、酱、清凉饮料、糕点的调味料,用量为0.02%~0.09%。
