1.长时间光照则着色。与水共热产生少量吲哚，如在氢氧化钠、硫酸铜存在下加热，则产生多量吲哚。与酸在暗处加热较稳定。与其他氨基酸、糖类、醛类共存时极易分解。
2. 存在于白肋烟烟叶、烟气中。

无臭或微臭，稍有苦味。熔点289℃，长时间光照则着色。与水共热产生少量吲哚。如在氢氧化钠、硫酸铜存在下加热，则产生多量吲哚。色氨酸与酸在暗处加热，较稳定。与其他氨基酸、糖类、醛类共存时极易分解。如无烃类共存，与5mol/L氢氧化钠共热至125℃仍稳定。用酸分解蛋白质时，色氨酸完全分解，生成腐黑物。略溶于水（1.1g/100ml，25℃）。
用酸分解蛋白质时,色氨酸完全分解,生成腐黑物。色氨酸是杂环氨基酸,是一种必需氨基酸。在体内能转变为5-羟色胺、烟酸、黑素紧张素、松果体激素和黄尿酸等多种生理活性物质。当人体缺乏色氨酸时,不仅会引起一般低蛋白症,还会产生皮肤疾患、白内障、玻璃体退化及心肌纤维化等特殊病症。它还能增强机体对γ射线的抵抗力。人体每日最低需要量为0.2g。

人：营养增补剂。抗氧化剂。色氨酸是人体重要的神经递质-5-羟色胺的前体，是人体的必需氨基酸之一；用于孕妇营养补剂和乳幼儿特殊奶粉；用于烟酸缺乏症（糙皮病）治疗药；作为安神药，调节精神节律、改善睡眠。
