丙烯酰胺是一种白色晶体化学物质，是生产聚丙烯酰胺的原料。聚丙烯酰胺主要用于水的净化处理、纸浆的加工及管道的内涂层等。淀粉类食品在高温（>120℃）烹调下容易产生丙烯酰胺。研究表明，人体可通过消化道、呼吸道、皮肤黏膜等多种途径接触丙烯酰胺，饮水是其中的一条重要接触途径。2002年4月瑞典国家食品管理局和斯德哥尔摩大学研究人员率先报道，在一些油炸和烧烤的淀粉类食品，如炸薯条、炸土豆片等中检出丙烯酰胺，而且含量超过饮水中允许最大限量的500多倍。之后挪威、英国、瑞士和美国等国家也相继报道了类似结果。
根据香港消费者委员会的研究，含碳水化合物的食物在经油炸之后，都会产生丙烯酰胺。研究已知丙烯酰胺可致癌。但世界卫生组织表示，由于难以统计丙烯酰胺要到哪一个浓度才会致癌。 [1]
