藻蓝蛋白具有鲜艳的蓝色色泽，因而可用作食品添加剂，以避免化学合成物对人体的伤害。

作为天然色素，不但藻蓝蛋白本身就是一种营养丰富的功能性原料，而且藻蓝蛋白特有的蓝色可以和其他天然色素以不同的比例混合，达到其他天然色素所不能达到的着色效果。欧美等发达国家十分重视藻蓝蛋白作为天然色素的开发。在美国藻蓝蛋白被食品与药品安全管理局(FDA)列为安全性产品。在欧洲，藻蓝蛋白被列入彩色食品原料不限量使用。在日本，日本企业早在十几年前就从螺旋藻粉中提取藻蓝蛋白用作食用色素。在中国台湾，藻蓝蛋白早已取代人工合成色素，用于食品的着色。

Developed countries such as Europe and the USA attach great importance to the development of phycocyanin as a natural pigment. In the USA, phycocyanin is classified as a safe product by the Food and Drug Safety Administration (FDA). In Europe, phycocyanin is included in the unlimited use of coloured food ingredients. In Japan, Japanese companies have been extracting phycocyanin from spirulina powder for food colouring. In Taiwan, China, phycocyanin has long since replaced synthetic colours in the colouring of food.
